Beroia Cocoa Butter Substitute (CBS) is a high-quality non-tempering hard butter derived from fractionation of Palm Kernel Oil. It is free from active lipases and has excellent microbiological characteristics. It shows extremely good stability against oxidation by virtue of its low unsaturated fatty acids.

Beroia Cocoa Butter Substitute (CBS) is a total replacer of cocoa butter ideally suited for making compound chocolate products like solid and hollow moulding, enrobing, toppings, couvertures etc. Compound chocolate with (CBS) form stable fat crystals in rapid cooling. It has superior gloss and gloss retention with excellent snap, flavor release and cooling sensation in the mouth when consumed.

Beroia Cocoa Butter Substitute (CBS) has been made extremely resistant towards fat bloom through incorporation of special emulsifier. Consequently, a long shelf life is ensured. However, as CBS has limited compatibility with cocoa butter, it is recommended that low-fat (10-12%) cocoa powder and skimmed milk powder be used in the formulation.
